If this dinner were to celebrate a birthday, job promotion, civic honor, holiday, etc, would you be asking this question? Of course not! You'd serve your dinner, knowing that if someone doesn't like the turkey then there is enough veg, bread, relishes, potatoes, cheese log, and so on to keep them from starvation. You are giving a dinner party, not running a restaurant. (Short answer: A wedding is just a party. Apply pretty much the same rules you would for other parties.)
